Harissa Prawn Cous Cous

Prawns and Cous Cous are two of my favourite things and this is one of my ‘go to’ recipes when I am hungry, time is short and I have no idea what to cook.  Harissa Prawn Cous Cous scales up easily for more than one and you can alter the ingredients depending on what you have in the fridge, freezer and larder, the only real essentials are the Harissa Paste and Cous Cous – I’ve done it with Bacon, left over Chicken and all sorts, or even as a veggie dish with no meat or fish.  It is good hot or cold, I often use it as a packed lunch.  it’s a great fast food recipe and you can use up all kinds of leftovers.

I’ve listed a few of the things I put in, but in truth you can add anything you like.  If I know I am going to have it as a salad after it has cooled I will add Seeds, Grapes, diced dried Apricot – which I soak for about five minutes in hot water.  Most things will work, if you find a good combination or new ingredient, add it in the comments – variety is said to be the spice of life!


  • 50 gms/ 2 ozs Cous Cous
  • 100 mls / 4 fl ozs boiling water
  • 15 mls / 1 tbsp Oil
  • 1 Onion, diced
  • ½ Pepper of your choice, diced
  • 100 gms / 4 ozs assorted fresh or frozen veg of your choice, eg Peas, Sweetcorn
  • 3 or 4 Mushrooms, sliced
  • Small handful of chopped herbs of your choice - Coriander works well
  • 100 gms / 4 ozs Prawns
  • 1 - 2 tsps Harissa Paste (to your taste)


Step 1

If you are using frozen veg, put them in a bowl and cover with boiling water, leave to stand for 5 minutes

Step 2

Put the Cous Cous into a small bowl and add the 100 mls / 4 fl ozs of boiling water, cover and leave to stand for 5 minutes

Step 3

Heat the oil in a stir fry or deep frying pan, add the diced onion and cook over a medium heat for a couple of minutes

Step 4

Add the diced peppers, mushrooms and any other fresh vegetables you are using

Step 5

Drain and add the frozen vegetables if you are using them

Step 6

Stir in the Harissa Paste and allow to cook through for a few minutes. (If you are using Chicken or other neat add at this point)

Step 7

Fluff the Cous Cous with a fork and add to the vegetable mixture along with any chopped herbs

Step 8

Throw in the Prawns and keep the mixture gently moving in the pan, You can adjust the seasoning at this point if you wish - a squeeze of lemon is my favourite.

Step 9

Keep the mixture moving until it is heated through, then pile into a large bowl
