Prosciutto Wrapped Stuffed Chicken


Prosciutto Wrapped Stuffed Chicken resulted from a desperate need to make something which can be really bland taste more interesting. I like Chicken but rarely buy the skinned breast fillets as I prefer to get either a whole Chicken and joint it myself or I get the Thigh portions which tend to have more flavour – and they are a much more sensible price.

Once again it was case of what do I have in the fridge that will go with this. It turned out to be the last few leaves of spinach lurking in the veg box, some Gorgonzola and a couple of slices of Prosciutto left over from a previous recipe. I hate throwing food away so the ingredients were gathered together and worked very well.

You can vary the recipe by using Chicken thighs, I would allow two per person if they are small but it is quite rich and filling so one may well be enough. You can also use Bacon instead of Prosciutto but I liked the crispy texture it gave to the dish, and it really added to the flavour.

I served it with some home made Ratatouille which acted as both a sauce and a vegetable accompaniment – and it really sang with the Cheese, making a really enjoyable meal out of a ‘fridge raid’!


  • 1 x Chicken Breast
  • 50 gms / 2 ozs Gorgonzola, roughly chopped
  • Handful of Spinach leaves
  • 2 slices Prosciutto
  • Salt and Pepper
  • 1 tsp of Olive Oil


Step 1

Preheat the oven to 190C/Gas 5

Step 2

Butterfly the Chicken Breast and flatten it a little to make it easier to get the filling in

Step 3

Season the inside of the chicken with black pepper and a little salt

Step 4

Lay some of the Spinach leaves over the inside of the chicken breast to line it

Step 5

Chop the rest of the spinach very finely and mix it with the chopped cheese

Step 6

Spread the cheese mixture on one side of the chicken and fold the other side back over it

Step 7

Wrap the filled chicken with the Prosciutto making sure it covers the ‘open’ edge

Step 8

Put the chicken into a baking dish and drizzle over the olive oil

Step 9

Bake for approx 25 mins or until cooked

Step 10

Remove from the oven, cover and allow to rest for a few minutes

Step 11

Serve with Vegetable accompaniments of your choice
